Preparation time: 1 Hour
Servings: 20-22 pieces


Ingredients
  • 500g Glutenous rice flour 
  • 150g Daikon radish (white radish)
  • 150g Yam bean 
  • 100g Dried shrimp
  • 1 small bunch of spring onions 
  • 1-2 teaspoon salt (to taste)
  • 1-2 teaspoon white pepper (to taste)
  • 450 ml water
  • 24 pieces of 7x8 cm banana leaves
  • Oil for cooking and greasing your palms

Directions
  
A. Prepare the filling
  • Grate the radish and yam bean into strips
  • Squeeze out most of the juice from the grated material with a muslin cloth or cheese cloth
  • Discard the juice
  • Chop the white part of the spring onions (not the leaves) into small bits
  • Fry the dried shrimps till fragrant and then add the grated material and fry till almost dry
  • Add the chopped spring onions and cook for a few minutes till fragrant
  • Add salt and pepper to taste
  • Scoop up the filling and place it in a bamboo strainer or wire strainer so that the juice will not pool at the bottom. If the filling is too wet, it will spill out of the dumpling when steamed. 
  
B. Preparing the dough
  • Sieve the rice flour into a big mixing bowl
  • Add water gradually and mix well with a paddle or rice scoop
  • Use your hand to knead the dough until it is smooth and even
  • Put a moist tea towel on top of the dough to stop it from drying 
  
C. Creating the dumpling
  • Grease your palms with a bit of oil before working on the dumplings
  • Pinch a piece of dough the size of a golf ball
  • Flatten the dough and your palm to about a diameter of 7 cm, ensuring that the centre is thick and the edges are thin
  • Form a cup with the dough on your palm and scoop the filling onto the middle of the dough
  • Gather the edges of the dough to enclose the filling completely
  • Form the almond shaped dumpling by rolling it gently in your palms
  • Rest formed dumpling on a banana leaf and repeat until all done
  • Place dumpling into a steamer and steam for 10-12 minutes on medium-high heat 
  
D. Preparing the broth (optional - the dumplings can be eaten as is)
  • Prepare a clear fried anchovies broth with Choy Sum or any green leafy vegetable
  • Place the dumpling (minus the banana leaves) into a bowl and pour hot broth onto it
  • Chop the remaining spring onions (green leaves) and sprinkle on top of the broth
  • Serve immediately
